Red
Wines
| Grape Variety |
Description |
| BARBERA |
A grape that produces a red, deep
colored, full bodied wine. This grape produces a dry somewhat tannic wine
that ages well and softens with time. This wine has a high alcohol content
and can exhibit a ripe currant flavor with a hint of smokiness. |
| CABERNET
SAUVIGNON |
Fruity flavors are typically
described as black cherry and currant. The jewel in California’s crown,
this varietal grape produces a dry red wine. One of the most popular
grapes. |
| CARIGNANE |
Predominately used in blending
this grape is full of tannin and is heavy bodied with medium acidity and
color. |
| GRENACHE |
Naturally sweet, fruity, with
very low tannin. This grape is used to produce some of the best Rose wines
in France. |
| MERLOT |
Distinctive aromatic, spicy red
table wine is produced from this varietal grape. An abundance of fruit and
velvet-like quality. Limited availability. |
| PETITE
SYRAH |
These grapes produce a deep
colored, robust, peppery wine that packs plenty of tannin and has good
aging ability. |
| PINOT
NOIR |
Originally from France where it
is used in all of the great red burgundies. This grape produces a wine
that is clear, brilliant, and medium to deep red in color. It is rich,
velvety, and full of flavors such as cherries, raspberries, and
strawberries. |
| ALICANTE
BOUSHET |
Makes a dry, dark, full bodied
wine. |
| SANGIOVESE |
The dominant grape in Chianti, it
is usually blended with 20% white Malvasia in Italy. The California grape
is lighter in color and can be blended with Zinfandel or Cabernet. This
wine needs long aging in the barrel. |
| SYRAH |
A cloned cousin of Petite Syrah,
this grape makes a full bodied tannic wine. Make it straight or use it in
any blend. |
| ZINFANDEL |
Three styles of red wine are
produced from this varietal grape depending on what region the grape comes
from. Styles include: a light spicy flavor with a berry-like aroma, or a
full bodied, oak aged, berry-like, dark colored, or a Rose style White
Zinfandel. |
| VALDEPINA |
This varietal grape originated in
Spain and is aromatic, dark, smooth, and velvety. |
| MISSION |
Makes a light to medium dry red
wine. |
| RUBY
CABERNET |
Dark colored, smooth bodied red
wine. Great with Pasta. |
White
Wines
| Grape Variety |
Description |
| CHARDONNAY |
This premier California varietal grape yields
a full bodied moderately acidic, dry, austere wine. Flavors can be
described as buttery, creamy, and smoky. Excellent with fruit and cheese. |
| WHITE MALVASIA |
Italian grape that produces a dry white table
wine used in Chianti or made straight. If made straight it is a heavy wine
similar to Chardonnay. Can stand up well to new oak. |
| VIOGNIER |
Produces a wine with a bright color and a
rich texture. Tasters often refer to peaches and apricots when describing
this wine. This aromatic wine should be consumed in its youth. |
| PINOT GRIGIO |
Excellent Italian style white wine. |
| RIESLING |
A classic German grape variety with the
potential to make a wine with tremendous flavors. Light in body and low in
alcohol yet intensely flavored with a zesty bouquet. |
| SAUVIGNON BLANC |
A grape producing white table wines ranging
from sweet to dry. When considered “dry” it is excellent with seafood
or poultry. When considered “sweet” it is a great sipping wine when
chilled. Sometimes the Fume` name will appear before or after the Blanc
which brings a drier, grassier, or smoky taste. |
| FRENCH COLOMBARD |
Produces a crisp, moderately dry, spicy,
white wine with floral attributes. Used for blending and sparkling wine.
Low acidity, high alcohol. |
| MUSCAT |
Produces outstanding sweet dessert white
wines. Forms the basis for Asti Spumante and other Italian sparkling
wines. Persistent perfume, musk, and ripe grape characteristics. |

Blends

| CABERNET AND
ZINFANDEL |
80% Cabernet and 20% Zinfandel. The addition
of Zinfandel will insure good color and will add more flavor to the wine. |
| MERLOT AND CABERNET |
80% Merlot and 20% Cabernet. This blend will
add color to the Merlot. |
| CABERNET AND MERLOT |
80% Cabernet and 20% Merlot. Typical Bordeaux
style blend. |
| CHATEAUNEUF DU PAPE
STYLE |
This wine is a mixture of principally
Grenache, which gives mellowness and alcohol, Cabernet Sauvignon, and
Alicante. |
| RED MERITAGE |
Assorted mixed blends. A favorite is Barbera,
Nebbiolo, and Petite Syrah. |
| ZINFANDEL AND SYRAH |
75% Zinfandel and 25% Syrah. Michael’s
favorite blend which produces a nice heavy bodied dry red wine. |
| BAROLO |
A great blend of Nebbiolo which is rich in
color and Barbera which is lighter and full of flavor. This is one of the
finest wines in the Piedmont region of Italy. |
| CHIANTI |
A strong, bold, red wine that goes well with
well-seasoned foods. A blend of Sangiovese, Black Malavasia, Barbera,
Petite Syrah, and Cabernet. |

Fashioned Red Blends

Description |
| ALICANTE
AND MUSCAT |
90% Alicante and 10% Muscat. An
Old Timers favorite. A dry dark red wine with a kick. |
| MUSCAT
AND ALICANTE (BLUSH) |
80% Muscat and 20% Alicante.
Another Old Timers favorite that produces a blush wine. |
| CABERNET
AND PETITE SYRAH |
70% Cabernet and 30% Petite
Syrah. This combination produces a robust dry red wine with a kick. For
the dry wine lover. |
